YABLUCHNYK: UKRAINIAN APPLE CAKE RECIPE
There are so many variations of this apple cake. I wanted to share this easy version with you all. This recipe is popular on TikTok and I wanted to make sure you all had it as well. My mom’s friend has an even simpler recipe that I can share in the next newsletter. Let me know if you want more apple recipes.
Ingredients:
750 grams peeled and thinly sliced apples (3 large Granny Smith apples)
1 teaspoon cinnamon
1/4 teaspoon cardamom
Zest and juice of one lemon
200 grams eggs (about 4 eggs)
200 grams sugar
130 grams AP flour (roughly 1 cup)
1/2 teaspoon baking powder
Pinch of kosher salt
1 1/2 tablespoons turbinado sugar
Method:
In a large mixing bowl combine the sliced apples, lemon juice, lemon zest, cinnamon and cardamom. Set aside.
Butter and line a 9-inch spring-form pan. Make a layer of apples on the bottom and along the sides of the mold, using about half the apples.
Using a hand or stand mixer, whip eggs and sugar until ribbon stage about 10 minutes.
Sift in half of the flour, baking powder and salt and gently stir to combine using a spatula (not the hand or stand mixer!). Now add the second half and incorporate all of the dry ingredients into the batter. Pour the batter over the apples. Now add the remaining apples to the batter in whatever fashion you want. Sprinkle turbinado sugar over the top.
Bake for an hour to an hour and 10 minutes at 350F/160C or until the top is hard to the touch and a skewer comes out clean from the center of the cake. Let cool and serve with a side of sweetened whipped cream and/or a dusting of powdered sugar (if you like).
